I have a set of FRP headers (used) for the cyclone, but plans now call for cutting the shock towers which will enable better clearance and, hopefully, more choices. Ground clearance is important as the car will be low in the front. Any suggestions on brands/part numbers?

Unless you run a shorty there's no such thing as ground clearance

Well, there's ground clearance and then there's Crites (no) ground clearance, lol. Mine are shorties, so I s'pose I'll just go with em since I already have em.

Um, my welding skills are like: puddle, splatter, burn through, burn through...

Practice doing a tack weld. It won't take long to master that. Do all your cut, fit and tack. Then take it to a pro and have them weld 'em up. The welding is not the big cost in building headers, it's all in the cut and fit.
