evergreen trees

Why are people planting evergreen trees than later on as they get matured.What I can not understand is owners cut off branches at the bottom on the trees.They want wind protction and privacy.

Eldon sometime they cut of lower limbs so it easier to mow or trim up under and around the tree or perhaps a limb or two was damaged during a storm.
