I found this recipe a month or so ago but I can't find the website now. I think it was originally called "Paula's Raw-some snacks" or something, but anyway I had copied it down and tried it out yesterday. I
really enjoyed it, and hope you will, too!
Ingredients
Use fresh ingredients wherever possible.
Serves: 20-24 (I made about 1/4 of the mixture)
- Nuts:
. 1/2 cup sunflower seeds
. 1 cup pecans
. 1 cup pistachios
. 1/2 cup cashews
. 1/2 cup tomato juice (organic)
- Produce:
. 7 stems fresh parsley
. 2 carrots
. 2 stalks celery
. 1/3 onion
. 1/2 bell pepper
. 1 clove fresh garlic
- Herbs:
. 1 tablespoon basil
. 1/4 teaspoon chili powder
. 1 teaspoon tarragon
. 1 teaspoon sea salt
. 1 teaspoon fresh cracked black pepper
Directions:
1. Place all "Nuts" in a glass bowl. Add organic tomato juice and stir. Let
soak 2 to 4 hours.
2. Puree all ingredients in a food processor, stopping to
stir midway through. Start mixing with the Produce first, add
Herbs, then Nuts last. Don't drain the nuts.
3. Make very thin bars out of the mixture.
Now, the recipe said: Place in food dehydrator and dry for 12-24 hours (or until dry). Turn patties midway through. If you do not have a dehydrator, preheat oven on lowest setting (mine was 170 degrees) and dry for 5 to 6 hours. Patty up the mixture, and place it on cookie sheets lined with paper towel. This helps them dry and not stick. Turn them over after 2 or 3 hours. If you like your bars really crisp (like me) it would be good to check them near the end and see if they need more time.
But this is what
I did. I preheated my oven to around 100 degrees Celsius, which was the lowest setting I had. Then I put in the mixture and let it sit for about 5 hours, and left it in overnight while the oven was off. I didn't have to flip them because the tray in my oven moves around and heat comes from all angles, so they were baked through. Make sure you make them REALLY thin, though, or else it won't work.
The best thing is that you can add or subtract ingredients according to your taste. These are really great because they are completely all-natural with no bad ingredients, plus you can take them to school or work or wherever or have them when you just need a quick snack. I only made some of the recipe because I was trying it out, but in the future I will make the whole recipe and keep it in store.
