Your instructions for setting the day and date resemble those of a Seiko rather than a Timex, Mo. All of my Timex are semi-quickset for both day and date. After pulling the stem out one notch I have to pass midnight for both to change, I rewind, and see if the day stays the same or if it reverts. If it stays the same I just go back and forth until the day and date match up. One changes before the other, so you can keep one the same while doing the adjustment. How exactly this works varies from movement to movement, and I don't keep them straight in my head except for the #31. That is non-quickset entirely, and I don't even keep them around!
