... this does not prove "God is not empirical".

A lack of evidence is not proof of non-existence. Using that logic man could not progress to find things like Pluto, since there was no empirical evidence of it 300 years ago.

"God is not empirical" is not a truth statement, it is a belief statement. It is also not about God. It is about "what God is not", with an application of secondary predication for "God".
