The big honkin' mg makes me think of those photos in Endkampf um das Reichgebiet of a crew firing a single FlaK 38 that had started out as part of a vierling on an Sd Kfz 7/1, then a stationary vierling when the unit was surrounded and tasked with point air defense, then broken up into its component weapons and hauled around in street fighting.
Anyway, I suspect you're right about how the height change was accomplished. It certainly would have been easier to delete one or more "layers" of the base than to fabricate new pedestals with a shallower cone shape. The Doyle drawings certainly show the gun breeches at a lower height above the fighting compartment floor (or at least ground level) in the late vehicles. This suggests an omission in the AFV kit, which is of course supposed to build into either an early or a late.
If only we had a photo that showed what was deleted...
