I always thought you were limited to M48A2 for the Six Day War, but apparently there were some m48A3 used by the IDF in 1967. Here's a link to idf-modelling that has 2 photos:
So a Tamiya M48, an aftermarket 105mm and some decent tracks (AFV club do a nice set) and your good to go. You may want to add some plastic IDF water cans to the turret, and don't forget to leave the vision riser off the cupola.
If you wanted to do an M48A2, there is the Legend M48A2 conversion but there's been a lot of shrinkage issues with this and other Legend sets. Or there's the Monogram "1/32" M48A2 kit which is more like 1/35 and can be crossed with the Tamiya kit.
