Looking at the period photos in the Manasherob books on the M50 and M51 there are many photos that seem to show unpainted tools, especially on the M50. But the books have more photos of the M50 versus the M-51 as well. Either the tools were never painted or if the were the paint wore off.
In addition to what mention above by Greg and David,
I can add that it dependent per tank. But in general, if you are building the 67 war time frame than most of the metal tools or parts will be glossy black while the wood parts of them can be natural wood or painted in similar sand grey of the tank.
