The main thing to remember is that it's not all the kits and AM stuff that makes the model, it's the modeler. It is all up to the modelers skills that is the most important thing. It doesn't matter how much you spend on a model, if you can't do a clean build and good painting and weathering then it may not win a thing.
Most of my models now a days are basically OOTB with just minor detailing like Sean has said, ie grab handles and such simple things. As a scratchbuilder you'll get more fun out of making your own parts or detailing. Resin interiors are ok but you can also do it yourself.
Not all kits need all that PE or resin and are just fine OOTB, but it's all up to you what you want to do with it. There NO model that is 100% accurate no matter how much you do to it to correct things. It's just not possible to create scale armor, trust me I know. I have scratchbuilt 6 38t hulls out of 15 thou styrene to make it accurate, and it was still too thick.
As I tell everyone on my forum, it doesn't matter what or how you build, just have fun doing it.
