It doesn't surprise me that this would have some determined bidders. Ever see an SM 300 minus its bezel insert? A terrible sight (rather like a human face minus the nose) and utterly unwearable.

Prices I've encountered on the elusive NOS SM 300 bezels sealed in Omega factory wrap have ranged from $275 to $400, so I'd expect that bidding might top $100 even for a bezel with an obviously incorrect insert. Otherwise, regardless of the condition of the rest of it, your 300 is dead in the water.

Bet this seller got a NOS factory bezel.

My other bet is that Omega made a batch of these bezels in 2000 and won't admit to having them, for whatever reason. I've had three, all sealed with a strip of white paper printed with a stock control number and "MARS 2000". And they seem to be made with Luminova rather than tritium, so can't be old new old stock.
