I often make a couple things on the weekend so they are ready to go during the week, and I will make 2 things out of one - ie, I cooked a chicken today, made chicken and dumplings and saved out the white meat to make chinese chicken salad. I also will grab a rotisserie chicken at times, add some veggies, garlic bread and the kids are happy. I make soup most every week, at least fall-spring, and often take that to work for lunch, too. I will also throw things in the freezer - ie, I make double meatballs, or freeze a few cups of sauce, etc so a couple wks later I can use it. A tried and true is sloppy joe's - hamburger, onions, some ketchup, brown sugar a bit of mustard, salt and pepper and some buns, add coleslaw or cottage cheese - good to go!
