I just mentioned this to Lisa, so thought I'd post it. I remember posting this somewhere once, so just ignore if you've already seen it. http://www.clarkesworld.com/m2km/nodgrin.gif
Cut up two or three boneless, skinless chicken breasts into bite-size pieces, season with salt, pepper and oregano, and saute in a generous amount of olive oil (it helps make the sauce.) When cooked through, remove chicken from pan and set aside, and saute a diced onion, a diced bell pepper, lots of garlic, red pepper flakes (a little heat makes it much better) and more oregano. When translucent, add a large can of diced tomatoes and a bit of chicken broth, and add the cooked chicken back in. Meanwhile, cook spaghetti, drain, and toss everything together with lots of feta cheese. We like sliced black olives, too. http://www.clarkesworld.com/m2km/eating.gif
