Post your favorite EASY recipe. I need some ideas for easy/quick dinners that are different than the ones I make every day. The ol' husband is getting sick of them
I'll start.
One of my favorites involves a crock pot, a jar of spaghetti sauce, a pepper, an onion, and a package of pre-cooked italian sausage. [My favorite combination is Ragu Organic Garden Veggie sauce and Emeril's Habanero & Green Chile Sausage.] Heat it for a few hours and serve over spaghetti. I usually have enough leftover for at least one more dinner and it freezes well.
And another bonus recipe also involves the crock pot. Add a big bag of frozen meatballs, a jar of chile sauce, and a bottle of squeezable jelly. Heat everything for 3 hours or so until the meatballs are defrosted and serve over white rice. I always get about 4 dinners out of this one, freezing the extra three.

Tina Rosenau actually gave me the recipe. She served it when we stopped by her house a couple of years ago on our Thomas trip.
Stuffed Shells. I don't have exact measurments for everything, because I mostly eyeball it.
Cook one box of Jumbo Shells according to package directions. Mix 3 or 4 chicken breast, cooked and cubed, with one pkg of frozen peas and carrots, thawed. Add to that 2 cups of cheddar cheese, a glob of mayo and salt and pepper to taste. (Just enough mayo to hold stuff together) Fill the shells with chicken mixture and line them in a 13x9 baking dish. MIx two cans of cream of chicken soup with one can of milk, whish well and pour on top. Bake at 350 for about 45 minutes or until heated through.
Well, first I keep cooked hamburger meat in the freezer. That in itself speeds things up. But my kids love "mini tacos" on the weekends. I buy the Tostada shell chips (the ones shaped like little bowls) and fill them up with seasoned hamburger meat or beans and top with cheese. In the oven to broil for a couple of minutes and voila. For dinner, I make some Mx rice and a quick salad to go with it.
Texas Spagetti is another easy one---spagetti with chili on top. They love the change of pace from regular spagetti sauce. Some carrots and brocolli on the side along with garlic toast and you are done (I buy canned chili).
Two other ways to serve chili: In big bread bowls with chunks of sharp chedder cheese on the side or in a baked potato.
Croissant rollups is another very quick and very easy and very much in a rush kid dinner. I don't do this when I have to feed Morris as well but if it is just the kids I have to get out the door and to something, this is fast, easy, and well-received.
I can't wait to see what others post. I'm always looking for extremely fast and easy dinner ideas. Cooking is NOT my favorite thing.
he was ready to send me out for ground beef right now, LOL! We actually used to do something similar a few years ago - line a plate with tortilla chips, cover chips with salsa and shredded cheese, and microwave until the cheese is melted. Then we'd share the plate over and episode of the X-Files. Ok, I guess it was more than a few years ago
I have done something similar w/ scoop chips - fill w/ refried beans, top w/ cheese & microwave, then add a bit of salsa.
& Lisa, I still make nachos late night while watching tv (maybe that has something to do w/ never losing any weight, lol). I use shredded cheese, salsa & sour cream.
I bought the chips this, week, definitely doing mini-tacos next week

I usually go on a kick during the summer and make several batches of this stuff before I get tired of it (or tired of hauling out the food processor, LOL!)
I try to be somewhat organized...some weeks are better than others!

I often make a couple things on the weekend so they are ready to go during the week, and I will make 2 things out of one - ie, I cooked a chicken today, made chicken and dumplings and saved out the white meat to make chinese chicken salad. I also will grab a rotisserie chicken at times, add some veggies, garlic bread and the kids are happy. I make soup most every week, at least fall-spring, and often take that to work for lunch, too. I will also throw things in the freezer - ie, I make double meatballs, or freeze a few cups of sauce, etc so a couple wks later I can use it. A tried and true is sloppy joe's - hamburger, onions, some ketchup, brown sugar a bit of mustard, salt and pepper and some buns, add coleslaw or cottage cheese - good to go!

Cut up two or three boneless, skinless chicken breasts into bite-size pieces, season with salt, pepper and oregano, and saute in a generous amount of olive oil (it helps make the sauce.) When cooked through, remove chicken from pan and set aside, and saute a diced onion, a diced bell pepper, lots of garlic, red pepper flakes (a little heat makes it much better) and more oregano. When translucent, add a large can of diced tomatoes and a bit of chicken broth, and add the cooked chicken back in. Meanwhile, cook spaghetti, drain, and toss everything together with lots of feta cheese. We like sliced black olives, too. http://www.clarkesworld.com/m2km/eating.gif
I actually think I'd leave out the feta and olives (I don't like either) but it sounds like it could be really good even without those ingredients. Thanks!
