We got a five gallon bucket and a tub of apples from my folks...
I made 1 gallon of applesauce it is unsweetened.. I use this in place of oil in breads, and some cakes I make.. I am freezing it in 1/2 cup portions in my cupcake pan.
I also peeled (I have one of those peeler things) and cooked some apples to make Apple pie Jam.. I made one batch last year.. it was so much better then I thought it would be...I fixed enough to make three batches, its frozen and waiting for jam making day.
I have a apple cake recipe my great grandmother used to make.. called for 4 cups diced apples and 2 cups of sugar.. I am doing three pkgs of that for the freezer. Just have to thaw and mix with the rest of the ingredient... just found a apple sourdough cake recipe that calls for the same amounts, will be giving that a try.
Mom said something about grapes this weekend.. will juice them and can them for jelly later.
I have dehydrated quite a few of the apples and a couple of bunches of celery, for the soups I am anticipating, seems I never had good celery around when I need it.. hope this will fix that problem... we will see....
We had a pretty good crop of potatoes but there was a critter living amongst them that took a few bites here and there... those have been blanched and are in they dehydrator now... good for scalloped pototoes. We will store some of them but I want to dehydrate a few more... I have some zucchini still coming on to get in the freezer.... I have three big sunflower heads to harvest... not sure what I will do with them yet...Sure wish we had a walnut tree.
