Response to I can't remember the name of the cut.

There are only a few where I will buy beef. Albertson's, never. They never have sold choice meat in the 40+ years I have been buying it. Fred Meyer, yes--but I have to be careful, because when they have a big sale on roasts, they will bring in select meat (labeled in the ad--have to watch for it). Safeway--also iffy, they used to always have good beef, but not anymore. Mostly sell trademarked meat, such as Rancher's Reserve or something with angus in the name. I mention these stores because Monica used to live in western Washington and knows them all. Think back to the meat you used to buy.... We have a local store that advertises that they ONLY sell choice meat.

Carolyn is right--choice meat is harder to find and prime is impossible. I know that prime has always been sold to high end restaurants. I think beef growers have entered into marketing agreements with some of the trademarked brands and don't worry whether it is choice or select. And more is probably select, since it is cheaper to produce (grass fed vs. grain fed).
