If a recipe says to set it on high for 4 hours, I put it on low. I haven't the crockpot much lately because nothing I made in it tasted great. It was usually ok, but not something we'd want to eat again.
You can mince up the beef and make bbq sandwiches. Or beef barley soup or vegetable soup. Or beef in gravy over noodles or rice. Anything where you can chop it small enough to seem tender and has a sauce or liquid. I made an eye roast for the first and last time a couple of years ago and it was tough even when very rare, which all the recipes I read said to make it. It made great soup though!
There's nothing worse than making food for company and them politely telling you how good it is when you know it isn't. Been there, done that.
