How much juice could you expect to get from say 1lb of carrots?>>
Not as much as you would think... DS is the one that has all that math in his head.
>> I love V8 juice and would like to copy the idea - is this possible? >>
Absolutely! You might have to add a little tomato paste to get the tomato flavour. That is what V8 does!
>>What is the pulp like that you get left with at the end?>>
I'm not good at using the pulp and it does make a lot of pulp. Fruit can be used for muffins and vegetables can be used in soup.
>>Should I find a really good deal on something, would it be plausible to freeze the fruit/veg to juice later, or would the soggyness bung up the works - would it be better to juice and then freeze? >>
I would juice it first. If you wanted to freeze it first you could use it like smoothie fruit in the blender. They say not to juice sale rack fruit. We just do it a little slower and let it clear from the blades before we continue. For sale rack apples it can be a little pulpier juice but we are fine with that. Also you can make very lovely hard cider... if that appeals to you...
We often ferment the juice instead of drinking it fresh. Juice it into a clean (but not sterile) jar, put on the lid (leave a little air space) and leave it alone for 3-4 days. When you come back it will be fizzy. We do it for the good gut bacteria.
