The family reunion we are hosting is turning out to be a bust. First, one clan backed out because one of the members broke her hip and the other two need her help to travel. Another clan basically flaked out. One family that had actually made reservations backed out due to health concerns (husband has same blood disease as Robin Whats-her-name from Good Morning America) and another family has to go to Texas on unexpected family business. This leaves DH's cousin and her DH and their daughter, her DH and 3 kids. These are actually the folks that we will have the most fun with, so I'm OK with it. If you ever wondered what you would do if you gave a party and no one came...that's where I am right now.
They are all going to be staying with us at the cabin. I am planning the food, which I will be paying for. Needs to be cheap, easy and filling. I have a 10 lb. ham, 15 lb. turkey and a bunch of ground beef. Any ideas for summer menus? I thought I would bake the ham the first night and serve it with baked or calico beans and potato salad. Turkey the second night, but need ideas for sides that are more summery than a big Thanksgiving dinner. Ham and turkey will provide lots of sliced meat for lunches. We will also grill hamburgers one night, and probably let them take us out to dinner one night.
So...any ideas? TIA.
