I could spin you a yarn about the haggis being a shy and elusive creature who roams the scottish highlands, but the real thing is traditionally eaten on Burns night (early January) It might be a New year thing as well.
Don't quote me on this but I think its made from minced meat ( lamb??) and lots of oatmeal along with other stuff( onion perhaps?). It is quite spicy. The mix is then sealed into( traditionally) a sheeps stomach and I think boiled.
The one I was given was a vegetarian haggis and no doubt sealed in a synthetic skin ( like a sausage)
I am NOT a haggis fan you might gather, although I have been obliged to eat it once or twice
