I just soaked a 1 lb bag of black eyed peas and cooked them with some chopped onion and parsley. I did not have any bay leaves or I would have used those too. I am planning to make this recipe for "hoppin John" from Hillbilly house wife. I hope it is good...
I know I mentioned it in the soup thread. I bought 1 lb cheap sweet italian sausage at Aldi and am gonna use that. What confuses me is the recipe calls for a 16 oz box of black eyed peas... I am guessing that should be roughly equal to ? 4 cups? Maybe? Or is that too much? I have never bought them frozen... does anyone know? I am planning to freeze the rest.
What else do you do with Black eyed peas thats good? I have to admit that it is probably the legume I am least familiar with... I cook with and use lots of pintos, garbanzos, black beans, lentils et cetera... But not these. I did not care for the smell of these as they were cooking- they smelled pretty yucky... (I know if I had bay leaves in there that would have helped mask the smell) but I found that wehn they were done they tasted pretty good. I have now strained them and am going to make the soup tomorrow morning, let it cool and then serve it for dinner tomorrow with a loaf of bread.
