I'm home today, and hoping to prepare some dinners for later in the week - I may end up working the next 7 in a row, so if I don't get a jump on it, I'll be too tired to care what we eat!
I am trying to eat down the freezer, which is full of miscellaneous meats, veggies and cheese - I will need the space for wedding reception storage soon. (punch, mints, bbq fixings...)
For lunch today, I'm having the solo fish fillet I found in the freezer as a sandwich.
Tonight we're having meatloaf, and I am going to make a SMALL dish of scallop potatos, along with a salad for dinner. I'm making a large meatloaf, we'll have meatloaf sandwiches for lunch tomorrow.
I think I'll soak beans, and prepare them today, for dinner later in the week. Dh will fix a pasta dish later in the week, to use up the fresh mushrooms in the frig before they go bad.
I know there are a couple of specially requested frozen pizza's for the granddaugters in the freezer, and they'll both be here Friday night - so that's what's for dinner.
I've got one package of chicken wings in the freezer - I'll be using them on Sunday, as part of the Super Bowl commercial watching party that we'll have here with the kids. (I have no idea, who's playing in the bowl this year, but tradition is to have a big appetizer party and skip to the commercials.) I may fix a faux seafood salad, as I saw I have a pkg of the seafood in the freezer. Rotel cheese, and chips, a veggie tray to go with the rotel, ... I'm sure we'll find plenty to round us out for that meal, ha!
So what are you having for dinner tonight? Is anyone else cleaning out the freezer? Do you have a weeks menu planned?
I made it last night when I had been working and didn't have time for a huge meal.
I had a pound of Italian sausage in the fridge that I bought for another recipe and then halved the recipe so had this left.
Fried the sausage along with some green & red peppers I had in the freezer, and put it in the soup, and then sprinkled in some dried spices, celery, garlic, and parsley I think.
I made potato soup as I usually do with about 8 cups of diced potatoes, soup broth made from bouillon cubes and onion, and then added the new stuff. After the soup was done, I added a couple of cups of cheese. Colby Jack was what I had on hand, but anything would work. It was really good.
The road to success is always under construction.
Pretty much the same thing as last night : ) I need to make some kind of treat to have on hand... I think I have a boxed mix, if so I might make cupcakes... but I have to see what time we get home from the Daisy's meeting. Otherwise the kids get cheap ice pops : )

I have zero money for groceries this week, I was out sick almost all of last week so my paycheck was pathetic. So I thawed a turkey and roasted it, we've eaten turkey in some form almost every day this week. Tonight it will be quesadillas with shredded turkey on them. Somehow I ended up with 3 packages of tortillas in my freezer so this seemed like a good use of materials on hand!
