I worked really hard today getting my freezer inventoried and reorganizing my pantry. I have obviously been lacking in organized shopping and meal planning, because he have a ton of food here that I didn't even know we had. The freezer in the basement needs to be defrosted, but we need to eat it down first. I told dh not to buy anything in bulk for awhile. Here is my menu for the week:
Monday: beef tips in (relatively) homemade mushroom gravy, green beans, salad
Tuesday: leftovers: lemon chicken soup & biscuits, orange chicken, rice & eggroll, or the above
Wednesday: spaghetti, meatballs, salad, breadsticks
Thursday: Buffalo chicken wings, sauteed zuchinni, mashed potatoes
Friday: Steak on the grill, salad, rolls
Saturday: Fish fry with fish we caught in Florida!! Not sure what else we will have yet.
It actually looks like there is a lot more there than I had thought. It's gonna be a while till I can defrost that thing! I have not menu planned other then this week. But I made a list of ideas of things I can make with things I have on hand. These are jsut the main components, I always serve a veggie with dinner and usually a starch.
Thurs-black beans in tortillas
Sun-sausage clazones or home made pizza

I didn't cook over the weekend. Between hubby's birthday dinner and being out of town, we ate whatever we could find.
Monday I made hummus. Note to self, I'm out of tahini. We had salad and olives with it, and I cut pita bread into triangles and fried them like chips.
I have beef tips in cream soup/onion soup/a little red wine in my crockpot for tonight. Rice and leftover salad will be the sides, maybe English peas for the toddler. He doesn't like salad yet.
Normally I eat supper at church on Wednesdays but this week I have a late doctor's appointment so I won't go to church. I'll make nachos that night. I have some homemade refried beans in the freezer, cheese, salsa, sour cream, olives, maybe leftover lettuce.
Thursday I'm making a big pot of homemade spaghetti sauce. I have garlic bread in the freezer that I got free with a purchase at Winn Dixie so that can go with it.
Tonight will be either meatloaf (if I have enough ground beef) made with salsa I want to get rid of, or fried tilapia. We are really down to the bottom of the freezer and everything that's left, we've eaten within the past few days.
