I heard a promo for Fresh Air on NPR today but then forgot it was on and missed it. I thought of you. It was called the Science and Art of Fermented Food. The interviewee also has a book. Here's a link if you're interested:

We hang out on the same fermentation forum. happy.gif Edited to say he has had a makeover since I saw his photo last... I saw a video of him making "Sandor slaw" which is basically sauerkraut made with whatever veg you can get.
