1 c. packed brown sugar
1 c. vegetable oil
2 c. quick cook or regular oats
1 1/2 c. all-purpose flour OR 1 c. whole wheat flour
1 c. raisins or chopped dried dates
1 c. chopped nuts or flaked coconut
1 1/2 tsp. cinnamon
1 1/2 tsp. cloves
1 tsp. baking soda
1/4 tsp. salt
Honey Glaze--recipe follows
Heat oven to 350 degrees F. Grease a 9x13" baking dish. Mix the brown sugar, oil, and eggs in a large bowl, stirring until smooth. Add the rest of the ingredients; mix well. Spread into a pan, smoothing with a spatula and patting the dough down with your fingers. Bake until the center is set but not firm, 17-22 minutes. Cool for 15 minutes and drizzle with Honey Glaze. Cool completely, then cut into bars. Store tightly covered for up to two weeks or freeze up to six months. Bake just until the center is set but not firm.
1/4 c. honey
2 T. margarine or butter
Bring to a quick boil, stirring constantly until the butter has melted.
