This recipe is from PamAnn October 2005. I like to add diced fruit like an apple or two or raisins, dried apricots, etc.
Baked Oatmeal
1 1/2 c 2% milk
2 eggs, lightly beaten
2 Tbsp oil (or melted butter)
1 Tbsp vanilla
2 1/2 c quick oats (I've used thicker cut oats too)
1/4 c firmly packed brown sugar
2 tsp baking powder
1 1/2 tsp cinnamon
1/2 tsp salt
Preheat oven to 350. Spray 1 1/2 qt casserole (9x9 or 7x11) with no-stick spray.
Combine milk, eggs, oil, vanilla; mix well.
Combine oats, sugar, baking pdr, cinnamon and salt; mix well.
Add liquid ingredients to dry and mix until well blended. Let stand about 15 minutes (important step - do not omit).
Pour mixture into prepared casserole. Bake, uncovered for 35 to 45 minutes or until center is dry and firm to touch.
