Gluten Free Corn Bread
1 cup corn meal
1 cup gluten free flour mix (or brown rice flour)
4 tablespoons raw sugar
4 teaspoons baking powder
1 teaspoon guar gum or xanthan gum
1/2 teaspoon sea salt
1 cup goat milk (or any milk or milk substitute of your choice)
1/4 cup canola oil
Preheat oven to 425. Mix dry ingredients. Stir in wet ingredients.
Pour batter into sprayed baking dish or sprayed muffin tins. Bake about 15 to 18 minutes, until lightly browned and tester comes out clean.
