curried sweet potato and quinoa soup

I love this soup.

1 tbsp vegetable oil
2 onions finely chopped
2 carrots, peeled and chopped
2 stalks celery diced
2 cloves garlic mnced
2 tsp minced ginger root (I use a lot more)
2 tsp curry powder
2 cups mashed sweet potato (this is the vegetable that I call yam)I usually just chop it up in the food processor.
6-8 cups vegetable or chicken broth
3/4 cup rinsed quinoa

salt and black pepper to taste
Serve with yogurt or sour cream if you like.

Fry all the veg. Onions, garlic and ginger first so they are not terribly raw when you begin the soup. If you add the curry powder at this stage it will develop the flavour, but you can really add it at any point.

Add the stock and simer until it is soup. 30 minutes- ish.

If I have leftover orange lentils I always put it in here, too.
