Tater Tot Casserole
One lb. ground beef
One 10-1/2 ounce can condensed cream soup (we use Campbell's Healthy Request cream of mushroom)
Salt & pepper
Preheat oven to 425 degrees. Brown ground beef and pour off fat. Salt and pepper to taste. Mix in cream soup. Spray an 8x8 or 9x9 square pan with nonstick spray. Spread meat mixture in bottom of pan. Arrange tater tots on top. Bake about 15 minutes, or length of time on tater tot package.
Shake'n'Bake chicken strips
Canned or frozen vegetables
Start baked potatoes first, since they have to cook the longest. Begin draining fruit.
Use boneless, skinless chicken breasts cut into strips. Follow instructions on Shake'n'Bake package.
Fruit Salad with Yogurt Dressing
One can tropical fruits for salad, drained
One can mandarin oranges, drained
One sliced banana
6 or 8 ounce carton pina colada flavor yogurt
Drain canned fruits well and mix together. Stir in remaining ingredients--if making ahead, stir in sliced banana just before serving.

Mac-n-cheese with added meat*
Coleslaw from a bag
Fresh or canned fruit or Jell-o salad
Butter and milk as directed on package
One pound ground beef
1/2 onion, chopped
Salt and pepper to taste
Brown ground beef with onion and garlic. Drain fat. Salt and pepper to taste.
Meanwhile, prepare mac-n-cheese dinner according to package directions. Mix with meat.
*Instead of ground beef, this is also good with cubed leftover ham, smoked sausage such as polska kielbasa, or tuna (drained) and peas. Some people like sliced wieners--but there is no accounting for taste, LOL.

Dee's Cheesy Chicken Strips
1 pound unbreaded chicken breast tenders or b-less s-less breast meat, cut in strips
2 cups Cheez-its
1/2 cup finely shredded cheddar cheese
Preheat oven to 450 degrees. Crush crackers in a large resealable bag and add cheese. Beat egg in large bowl, add chicken to egg and toss to coat. Remove chicken from egg, allow excess egg to drip back into bowl, then place chicken in bag of cracker mixture. Seal bag and shake evenly with cracker mix. Place chicken in a single layer on baking pan (use foil and spray with nonstick spray for easier cleanup). Bake uncovered 15-20 minutes, or until no longer pink in center. Serve with dipping sauces, such as barbecue or ranch, if desired.
