11/2 (one and half) cups of flour
4 teaspoons baking powder
1 cup of coconut
1/2 (hal) cup sugar
2 eggs
11/4 (one and quarter)cups coconut cream
Note: if using self raising flour ommit baking powder.
Sift flour and baking powder into a bowl. Stir coconut and sugar. Make a well in centre of dry ingredients. Beat eggs and coconut cream together. Pour into dry ingredients. Mix to just moisten. Three-quarters fill greased muffin pans. Bake at 200 celcius for 15 minutes or until muffins spring back when lightly touched
