FISH STOCK
1.5 kg fish bones(fresh)
1 medium onion (chopped)
2 sticks celery (chopped)
2 bay leaves
1 teaspoon black peppercorns
12 cups water
Combine all the ingredients in a large pan, simmer uncovered for 20 mins and then strain.
VEGETABLE STOCK
2 large carrots(chopped)
2 large parsnips(chopped)
4 medium onions(chopped)
4 bay leaves
2 teaspoons black peppercorns
24 cups water
Combine all ingredients in a large pan, simmer uncovered for 1.5 hours, then strain.
CHICKEN STOCK
2kg fresh chicken bones
2 medium onions(chopped)
2 medium carrots(chopped)
3 bay leave
2 tsp black peppercorns
20 cups water
Combine all ingredients in a large pan, simmer uncovered for two hours and then strain.
