700g Butternut Pumkin, skin and seeds removed
6 Rashers of Bacon chopped
1 Onion finely chopped
50g baby spinach leaves
1/2 cup of shredded parmesan cheese
300ml thickened cream
pinch of ground nutmeg
pepper to taste
Cut pumkin into thin slices.
Place 1/2 of the pumkin slices over the base of a large greased baking dish
Combine the bacon and onion mixture over the pumkin layer and then top with half the spinach leaves and half of the shredded parmesan cheese, repeat the layers once more. Top with remaining pumpkin bacon and onion and more parmesan cheese, combine cream with nutmeg and pepper and pour evenly over the layers and bake in a 180c oven for 1.5 hours or until pumpkin is tender.

These are my favourite recipes and my easiest, I try to keep them simple so the guys can have a go ...... you never know when they might want to cook for someone special to impress them......any way glad you liked the recipe
