My sk and I are very "More" with persistence but I have learned to choose my battles very carefully. He does push me but I stand firm (push back) on anything that is a definite rule in our home or a safety issue, anything else I will compromise on. If he only wants to eat from a soup spoon and is adamant about it then fine with me.
My redirection is the offering of alternate choices. I use choices alot and most of the time it will work. I have also found that with my sk's maturity and acceptance the persistence doesn't seem to overwhelm me as much. He is more accepting of having to wait for ice-cream until he has eaten dinner, because he understands why.
