trigger, hammer and sear

I have been reading a lot of posts about people replacing their stock triggers with Clark or Volquartsen, and replacing their sears and hammers with Volquartsen as well. I understand replacing the sear and hammer, as these two pieces have engagement surfaces that will be improved and give a lighter, crisper let-off than stock stuff, but why replace the stock trigger? It's merely a pivot point that has no engagement surface on it at all. You could add a pre-travel adjustment screw to complement the over-travel screw that is already on a stock target trigger, couldn't you?
