Eggs are everywhere aren't they! Just like sugar! You probably could get away with not coating the zucchini in them and in the flour ... but I'm not sure if you could go without them in the cottage cheese. I wonder if I will break out or not because of them. I should be okay since it's not a whole lot of egg considering the size of the lasagna. Time will tell.
