don't like using sheets because the fabric is heavier than quilting cotton and therefore can be harder to quilt. Personally, I've never had a problem quilting when I've used sheets as backing.
Also, some people don't like using fabric that's already been used because its strength is compromised (depending on how much use the fabric has had previously).
But if you've found something that you like and want to use, then go for it. Some people like to use vintage feed sacks, so why not wintage bed sheets? I've used recycled clothing and it's been quite successful. Reycled fabrics tend to be okay for a project that won't require a lot of laundering or where there won't be a lot of stress on the fabric (hanging quilts can cause stress but if you rotate the quilts from wall to bed or storage, then this is minimised).
Hope that answers your question.

'Your beauty should not come from outward adornment, such as braided hair and the wearing of gold jewelry and fine clothes. Instead, it should be that of your inner self, the unfailing beauty of a gentle and quiet spirit, which is of great worth in God's sight.' 1 Peter 3:3-4
