After taking 2 years of latin in high school (Trinity) and a semester of Latin at St. Vincents where I learned from a Bennedictine monk, I would pronounce it 'day'... bear in mind that Vatican Latin is different than classical.
The monk who taught at St. Vincents did stuff like translating Corinthians for the current Vatican endorsed version of the Bible. Anyway, he told us that Latin pronounciations have changed due to things like undereducated songwriters and choir groups mispronouncing words to make the song sound better and people coming from all over the world to learn Latin and speak it at the Vatican. Imagine Latin spoken with a Chinese accent or a South African accent. Believe it or not, Latin is actually still considered an evolving language in the church.
To illustrate: The song title, 'Gloria Dei' is usually pronounced the way Jim said by laypeople. However, the proper academic way to pronounce it is 'day'.
