At the school garden a few years ago we planted pumpkin seeds IN bags of enriched soil -- made a few slits on the top for the seeds and a few on the bottom for drainage and set them out (laying flat) on the grass. Had good success with this. It's easy and requires very little "maintenance". Should work well for anyone who has room for vines to spread but doesn't want to do a lot of digging. Crawling cucumbers, watermelons, etc. should also work well.
