Kitchen floor cleaning

We recently started cleaning a restaurant kitchen floor. This is our first kitchen floor we have cleaned. I have to say I am amazed at the mess we are seeing and the grease. My question is what are others doing for daily kitchen floor cleaning in a greasy restaurant? Tools, procedures, chemicals and so on. Appreciate any help.

I have a chain of restaurants we service the best degreaser I've found is Astrochem from NCL. It's awesome just lay it down just like you were doing a VCT strip, let dwell for 5 min and mop, or use a swing machine or Cimex with a nylo grit brush if its terrible. Astrochem degreaser is by far the best Ive ever used, and I've used a lot of different brands. Hope this helps, Scott
