Response to any tips for an authentic curry taste...???*

Indian: a blend of cumin, coriander seeds, fenugreek, black mustard seeds, chilli. and then lots of onion and garlic... and tomato or cream depending on what region you're trying to emulate

Thai: best off buying a pre-made curry paste - available in red or green versions... fry the paste first, then add meat, veg etc...and add coconut milk!
