I just wanted to thank you for this recipe. I was worried about how rough kids would be on gingerbread but this recipe made for very strong pieces. In place of the honey I used half honey and half molasses and got a darker brown color on the finished product. Also thanks for the small house plans. It was the perfect size for kids to work on their own individually.
I used this recipe exclusively this year and build 3 display size houses. I replaced all of the honey with molasses. It was a bit stickier so I had to use a little more flour, but I really liked the finished product. And, it is an easy recipe to make over and over again in the mixer.
Just wondering if I could use molasses instead of honey and dark brown sugar instead of white sugar? I am trying to get a really really dark gingerbread from a BIG project.
Yes - last year I replaced all of the honey with molasses - the dough was a little stickier so needed more flour, but other than that it was a great and easy dough to make.
Since you heat-up the molasss (honey), I would think that any sugar would work since it melts fairly easy.
