I have made my first gingerbread house this holiday which my friends adored. I am half way through my second one which I baked and assembled last night, this one has to be PERFECT as it is for my mother and my grandmother (who are picky and my grandmother is a fabulous cake maker).
I have used platinum grade leaf gelatine sheets to make glass for the windows.
Simply cut the sheet gelatine to fit your window, pipe icing around the edge of the hole in the gingerbread where the window is to sit and stick the gelatine into this. You can then use sweets around the edge of the windows to make the window frame tidy. It looks fantastic.
