Well. Horses "are made" to live on grass. But besides this rather "general" statement, they learn to appreciate all sorts of other tastes. In the wild they would pick and choose what ever they need for health and good condition - this would include herbs, roots, fruits, nuts, leaves...... horses are "self-medicating".
In a domesticated situation the consumption of apples and carrots would be an "acquired taste". (But a happily acquired one!)
If fed in moderation, both apples and carrots are welcomed treats and make any horse-food more "interesting".
There is a debate on how to feed carrots!!!! (amazing how there is a wrong and a right way for everything....): Some say you should always cut them into stripes, so a horse can't choke on the pieces.
My horses eat carrots safely whole, cut, diced, mashed, striped, with green, without green, washed, unwashed..... and they have never choked on any shape..... I have!
With apples be careful, as there is a lot of acidity.
