Does anybody know what the chestnut (above the knee and hock)is?
I noticed a strong scent coming from it when removing the flaky skin.

we were just discussing chestnuts and ergots on the ESI discussion forum, follow the thread starting "Anatomy" underneath the "books" thread near the top especially Dr. Deb's comments regarding formation of chestnuts.

Kirsty, thank you for pointing us in this direction. This would have to be one of the most intelligent and informative forums I have been too. I have learnt so much already, and I have posted some questions of my own, and sent in some photos for conformation analysis. Thank you!
