French Baguette - from You Tube

1 - Baking utensils needed for the french baguette

2 - ingredients - 4 cups of bread flour, 1 tblsp of active dry yeast, 1 tbsp - salt, 2 cups of warm water, 1 oz of olive oil.

3 - Mix flour and salt

4 - Put the warm water into the bowl, add yeast to the water, mix with a whisk (*note I bloom the yeast first before I do #3). Split the flour and salt mixture into 2 bowls.

5- Mix all the ingredients together

6 - Rise the bread for 3 hours

7 - Add rest of flour & knead for 10 mins

8 - Knead the Dough

9 - Rolling the dough over, knocking the air out, preparing it for a 2nd rise, oil up the bowl, let rise another hour. (*note I don't knock the air out until I take it out of the bowl, then get the air out by pushing my hands on it, like Danielle Forestier's video with Julia Child)

10 - Put the oven on to 450ΒΊ, punch the dough down make sure the aire is all out of it, flour the board, take the dough out and roll the dough over itself, then work all the air out of the dough.

11 - Dough is put into a rectangle, cut into 3 strips, roll them, work them with your hands, roll them, then flatten them to get the air out

12 - Putting the bowl of water into the heated oven, then putting the baguettes into the oven, set the timer for 15 min, take the water out, then it's another 7 - 10 minutes to cook the baguettes

13 - Remove the water from the oven after 15 mins, turn bread around, set timer for 7 more mins

14 - 7 minutes is up, so check on bread, let it cool for 15 mins
