      Make him sign a one line receipt saying the check is payment in full for the accident occurring on this date should work. Just don't get specific. If you say damage caused in the accident then he could come back for medical issues. If you list damage and medical he could come back for something else. Keep it simple and include "payment in full". Don't make a big deal of it or he will balk. Writing it in the memo section of the check helps too.
