..pure bleach in a pinch (actually, when too lazy to mix up a proper sanitizer), and haven't had any damage resulting. But then a "working" knife isn't pretty after awhile anyway so maybe cosmetic damage isn't obvious vs. a new knife.
The 10% solution I quoted you is actually off of the high-end of the scale. I use it since it is easy to remember and measure (most spray bottles have a 10:1 markings on the side). You may find that your bottle of bleach will list the recommended proportions for dilution for different sanitizing tasks.
If this is something that you are going to do often, you may want to hunt down the santizing solutions used by professional kitchens. It is effective, but it is also the most gentle for regular and prolonged use.
