The nylon braid is a more recent product and the stainless has been around for decades. Which means fewer manufacturers and since it's new, it's cool and they'll charge you more for it. It handles almost the same pressures as stainless. Pressures that you'll never see in an automotive application anyway. We're talking NASA pressures here. ALSO the nylon hose ISN'T shiny silver so your hoses on your car won't look like 95% of the other car's hoses. Which of course is another reason it's more expensive.
