At pouch size, sex often can't be determined, so you might want to make the majority of the pouches unisex, and split the rest girl/ boy; whatever your hospital requests comes first, of course.
As for edge finishing the satin-backed flannel, could you fold the edge twice, narrow hem, and topstitch? Or serge the edge & fold once, then stitch. Hope this helps - Gail in GA
