Layout of Cobblestone streets, Modeling water??? Reference, experiences???

I am planning a diorama and I am stuck with some questions:
On the diorama I want to construct a cobblestone road. I want to use separate cobble stones for the construction instead of using sections like Verlinden productions offer, because with separate stones I have more possibilities to construct the street my own way. Now, the stones are no problem, but the layout?????
The question is:
Is there any online reference material for the layout of cobblestone streets? I mean: What does a Street look like at the place where a main street and a side street meet each other? And I donít just mean two streets that are rectangular two each other, but more like 120 degrees or a ďYĒ-shape, where 3 street sections meet.
The other question is about water. I want to build a small harbour scene, so I canít (and donít want to) avoid modelling a water section. The water should look quite calm, only small waves and I want to put a boat in it made out of Evergreen sheets.
I am interested in any sort of resin water or other water-simulation products around.
Has anyone got any experience with modelling water??? Any brands??? Problems???
I hope someone can help me. I have had it with all the preparation-work, I want to start building!
