You are right. Setting up to produce a number of a specific display case size saves time in producing a number of display cases at one time. How about considering a compromise? Find one size that allows for display of several types/sizes of individual models and/or diorama and just make that size and stack them. That way you have a standard size but are not limited in your creativity in your future model projects. Making just one size that fits all your needs will save time and probably money on materials. It can also produce an attractive modular display cabinet. Good luck...sounds like an interesting project.
